Hiden - An experience not to be missed

A Japanese restaurant hidden behind a taco shop, do I have your attention, I hope so. Hiden is an experience not to be missed if you love sushi.

Hiden only offers eight seats in the tiny but sophisticated restaurant. If you are lucky enough to procure a seat at $170 a person, not including saki or wine, you will be lucky enough to enjoy a fabulous evening. A code and the address is sent to you by e-mail the day of your reservation.

The evening began with a glass of Brut Majeur Champagne and Shigoku Oyster with watermelon-yuzu granita, chili and shiso, refreshing.

There is a natural manipulation of flavors that Chef Honda delivers though out the evening. The sunomono - Uni with angel hair- was a match made in heaven. A sashimi selection of Chu Toro, Akami, Hotate, Shima Aji, melted in my mouth like butter. The miso soup was not your average miso, the fire roasted vegetables along with the wagyu tallow added that extra spice you would not normally find in miso soup.

The fresh sushi selection made with sweet rice consisted of Madai, Aji, Kanpachi, Zuke, Otoro Aburi, Sake, Ikura, Uni, Anago along with a Negi Toro hand-roll. Each guest received a different piece of sushi at different times, allowing you to savor the rich flavors of each delicately sliced piece of fish. A delightful piece of seared A5 Miyazaki Wagyu ribeye exploded with flavor as I bit into the tender piece of steak. The end of this “not to be missed” Omakase was a refreshing cheesecake sorbet.

Chef Honda and his sous chef, Stephen, delivered an unforgettable Japanese experience unlike any other, the atmosphere- quaint and comfortable, the other guests -delightful and friendly, the wait-staff- eager and helpful the food , undeniably FANTASTIC!
